Ghoulishly Good Spaghetti & Butternut Squash

Get into the Halloween spirit this week with this warming pasta dish using black pasta and butternut squash.

It may look frightening but the only frightening thing about this dish is that it is low fat and packed with fibre this dish is quick and easy to make.

Step 1:

Preheat the oven to 200 degrees

Step 2:

Mix the squash and bell peppers with garlic, thyme, red pepper flakes, oil, and 1/2 teaspoon of salt and pepper.

Step 3:

Roast all these ingredients taking time to stir once until the vegetables are soft. This should take 25 to 35 minutes.

Step 4:

Cook linguine. Once cooked, drain and return to the pan.

Step 5:

Add in the roasted vegetables and stir.

Step 6:

Finish with some extra virgin olive oil and some parmigiano reggiano cheese

Ingredients

2 pounds butternut squash, peeled, seeded, and cut into 3/4-inch chunks

2 orange bell peppers, cut into 1-inch pieces

4 garlic cloves, thinly sliced

1 tablespoon thyme leaves

1/2 teaspoon hot red pepper flakes

1/4 cup extra-virgin olive oil

1 pound black linguine or spaghetti (squid or cuttlefish ink pasta)

Accompaniment: grated Parmigiano-Reggiano (to season and finish)
