Green Bean Frittata
- Chop the spring onions
- Chop the dill
- Trim the ends off the green beans
- Preheat the oven to 170°C
Crack the eggs into a mixing bowl and whisk with a fork
Add the chopped spring onions and the chopped dill to the bowl with the eggs. Season well with salt and pepper.
Heat the 1 tbsp sunflower oil in a non-stick, ovenproof frying pan over a low heat
Add the 1 tbsp sesame seeds to the pan and cook lightly for 1 minute (until they start to turn golden brown).
Next, pour the egg mixture into the pan and stir it roughly as it begins to cook, combining the sesame seeds into the egg mixture
Evenly arrange the green beans on top of the egg mixture in the pan
Put the pan in the oven for 10-15 minutes or until the egg is firm
Serve with the crisp lettuce on the side.
100g green beans
2 spring onions
1 tbsp sesame seeds
1 tbsp sunflower oil
