Caprese Avocado Pasta
- Finely chop the garlic
- Roughly chop the tomatoes
- Peel, de-stone and chop avocado
Heat the sunflower oil in a frying pan over a low heat and sauté the finely chopped garlic and 1tsp ground cumin for 1 minute.
Next, add the roughly chopped tomatoes to the pan with 100ml water. Turn the heat up for 10-15 minutes to reduce to a sauce, leave on a low heat to simmer gently.
Grate the lemon zest into the sauce then squeeze in the lemon juice and season with salt and pepper.
Cook the gluten free pasta in a large pan of salted water for 10 minutes.
Add the chopped avocado to the tomato sauce and cook for 2 minutes.
Drain the gluten free pasta and pour it into the pan with the tomato sauce. Add the goats cheese and mix everything together well
Finally, split the gluten free pasta between two bowls and drizzle with olive oil.
200g gluten-free pasta
1 tsp sunflower oil
2 garlic cloves
1 tbsp olive oil
100g Goats Cheese
1 tsp Ground Cumin
Salt & pepper
